Portabello Mushroom Veggie Tacos (2)

Ingredients:
Red Bell Peppers
Green Bell Peppers
Onions
Portabello Mushrooms
Cilantro
Sour Cream
Avocado
Pico De Gallo
2% Monterrey Jack Cheese
Flour Tortilla
Salt
Fiesta Fajita Seasoning
Olive Oil

The way I prepared this dish:
Add Olive Oil to a large skillet and spread with a paper towel just to coat the pan so nothing sticks
Add Red Bell Peppers, Green Bell Peppers and Onions to the pan
On high heat saute covered for about 5 minutes, stirring occasionally
Add Mushroom, Cilantro and Seasoning and turn heat down to med
Cover and saute until your vegetable are the consistency you like. I like my onions to be a bit crunchy, not soggy

Then heat your tortilla and decorate it to your liking. 😊
