Method:
1. Put a wok or pan over medium heat with 2 tbsp cooking oil or ghee in it. Add 3 or 4 tbsp raw peanuts into it, fry peanuts while stirring and turning sides on medium heat for 3 to 4 minutes or until skin color of peanuts is darkened, drain fried peanuts into a bowl and keep aside for a while.
2. Add 1 tsp mustard seeds into same wok in remaining oil. Also add 6 to 8 fresh curry leaves and, coarsely broken 2 dried whole red chilies. Stir and saute for ½ minute then reduce heat to low. Now add ¼ tsp or to taste red chili powder along with, ½ tsp ground turmeric powder, 1 tsp or to taste edible salt, and 1 tsp or to taste dried raw mango powder into wok. Stir to mix all and saute for 30 seconds on low heat.
3. Now add 2 cups murmura i.e. puffed rice into wok, increase heat to medium low and stir to coat puffed rice well with spiced oil.
4. Add 1 cup or more to liking corn flakes; stir and toss to mix. Now add fried and drained peanuts into mixture; stir and toss to mix and disburse everything evenly. Stir all to mix well and toss everything in wok. Roast the mixture at low heat while stirring and tossing frequently for 2 to 3 minutes.
5. Finally sprinkle with 1 tbsp of crumbled dried fenugreek leaves; stir to mix and roast for another couple of minutes on low heat then turn off the heat.
6. Transfer mixture into a large bowl and allow cooling to room temperature then transfer cooled murmure ka namkeen i.e. puffed rice mixture snack into an airtight container; you may store it up to several weeks at room temperature.
7. For making Mumbai style bhel take out the required quantity of puffed rice mixture into a large bowl. Also add gram flour tiny fritters, fried spicy gram lentils.
8. Also add peeled and chopped cucumber, chopped tomato, boiled, peeled and chopped potato, peeled and chopped onion, chopped fresh cilantro or green coriander, chopped fresh green chili. Season with salt to taste, red chili powder to taste, drizzle with sweet and tangy tamarind chutney to taste, spicy and tangy green coriander or cilantro chutney to taste, and freshly squeezed lemon juice to taste. Toss and mix all well to disburse and season evenly.
9. Garnish with some more Bikaneri save i.e. fried tiny gram flour fritters. Mumbai style bhel is ready to serve; serve delicious murmurey ka namkeen i.e. puffed rice mixture snack as anytime crunchy time pass appetizing snack, or as delicious mouthwatering Mumbai style bhel, choice is yours, enjoy.
